Fluffy Buttermilk Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, eggs, and melted butter.
  3. Pour wet ingredients into dry ingredients. Stir until just combined (lumps are okay).
  4. Heat a griddle or skillet over medium heat. Lightly grease with butter.
  5. Pour 1/4 cup batter per pancake. Cook until bubbles form on surface. ( 2 min )
  6. Flip and cook until golden brown on the other side. ( 2 min )
  7. Serve immediately with maple syrup and fresh berries.

Dad would make these every Saturday morning. The house would fill with the smell of fresh pancakes and maple syrup.
